Cooking Instruction Validation Workshop at Loughry Campus

Many consumers rely on the instructions for cooking or heating on food packaging. Subsequently, CAFRE delivers a workshop aimed at providing guidance and practical advice for staff who are formulating cooking instructions. Food safety legislation places the responsibility for accurate food labelling on the Food Business Operator. CAFRE’s Cooking Instruction Validation training facilitates the development of procedures and protocols. These will ensure that products can be ‘safely’ heated before consumption.

During the workshop, participants will learn to generate and validate their own internal cooking instructions. The aim is to remove significant risks of food poisoning caused by heat-resistant pathogenic bacteria potentially present in the food.

Lead Technologist Hayley O’Neill explains, “There is a requirement in the food industry for businesses to complete cooking validations. This practical workshop will demonstrate how appliance calibrations and product validations are conducted to ensure that accurate cooking or heating instructions are stated on food product labels”.

Jemma Waters from Sofina Foods, Cookstown attended the workshop and commented, “I thoroughly enjoyed the Cooking Validation Training course held at CAFRE. I gained an understanding of the legislation surrounding cooking validations and the standards to be achieved. Importantly, I learned about the necessity of calibrating cooking equipment and the need to validate products before launch. The course effectively combined practical elements with theory, highlighting the importance of due diligence. Moreover, it provided me with the opportunity to network with other New Product Development professionals. I apply the knowledge gained in my everyday work”.
